Broccoli in almond sauce
Aromatic. Spiced. Tasty.
Ingredients for two people
- Medium-sized broccoli
- 2 tbsp vegetable oil
- ¼ tsp mustard seeds
- ¼ tsp cumin seeds
- 2 pinches of asafoetida
- 1 tsp turmeric (ground)
- 2 pinches of black pepper
- 1 tsp coriander seeds (ground)
- ¼ tsp rock salt
- A handful of almonds
- 200ml water
- Some fresh lemon juice
- Some fresh coriander
Preparation
- Wash the broccoli and cut into florets of about one to two centimetres.
- Blend the almonds until they turn into flour.
- Heat vegetable oil together with mustard seeds and cumin seeds in a medium pot until the mustard seeds start to pop.
- Add broccoli, water, asafoetida, turmeric, pepper, ground coriander, and rock salt to the pot and leave to simmer over a low-medium heat for about 10 minutes until the broccoli is al dente. Add some water if necessary.
- Gently stir in the almond flour until the desired consistency is reached.
- Season with lemon juice and garnish with fresh coriander.
